CRAB STUFFED AVOCADO

Begin by chopping onion and celery into small pieces. In a bowl, combine Lump crab meat, onion, celery, mayonnaise, mustard, lemon juice, olive oil, salt and pepper. Mix together thoroughly and spoon onto avocado halves. Top with some sesame seeds and organic kale microgreens.

CRAB WEDGE SALAD

Begin by chopping the cucumber and bell peppers into small pieces. In a bowl, add Lump crab meat, cucumber, bell peppers, vegenaise or mayonnaise, olive oil, salt and pepper to taste. Mix all ingredients thoroughly. Wash the lettuce well and cut leaves in half. Place around 4 pieces on a plate and top with your crab mix.

CRAB & MUSHROOM RISOTTO

Begin by heating vegetable (or chicken) stock in a small pot on low heat. In a medium size heavy sauce pan, saute garlic with one tablespoon of olive oil. Add mushrooms, salt and pepper to taste and cook for 1 minute. In the same pan, add 1/2 cup of vegetable stock and let the mushrooms cook for about 5 minutes - set aside.
