1 lb Margarita® Premium Jumbo Lump Crabmeat
1 lb medium Shrimp - chilled, cooked, peeled, deveined & tails removed
1 cup cherry tomatoes, diced
1/2 cup red onion, diced
1 avocado - peeled, seeded, chopped
3/4 cup cilantro, chopped
1/2 cup fresh lime juice
1/4 cup fresh lemon juice
1/2 cup crunchy corn kernels
Pink Himalayan Salt
Black pepper
Plantain chips
Olive oil
Begin by prepping all your ingredients. Place the Margarita® Premium Jumbo Lump Crabmeat, shrimp, red onion, tomatoes, cilantro and avocado in a bowl.
Pour the lime and lemon juice over the ingredients. Add salt and pepper to taste, as well as a some olive oil. Gently toss to coat everything.
Cover your ceviche and refrigerate for at least 30 minutes or up to 8 hours. If you plan to refrigerate your ceviche for longer than 30 minutes, omit the avocado and add it right before serving. Finally add the crunchy corn kernels and mix.
Serve chilled with plantain or tortilla chips if desired.
