1 lb Jumbo Lump crab meat
1 lb Gnocchi - Capello's grain free
2 cups cherry tomatoes, sliced
1/2 cup green onion / scallion, chopped
3 tbsp sun-dried tomato pesto with basil
5 tbsp nutritional yeast
3 tbsp tomato sauce
Parmesan cheese, freshly grated
2 tbsp Olive oil
Black pepper, to taste
Salt, to taste
Begin by bringing some salted water to a boil to start cooking your gnocchi - we used Capello's Almond Flour Gnocchi and followed the package instructions.
Proceed to slice the cherry tomatoes in half and chop your green onion into small pieces. In a medium sized pan on medium heat, pour your olive oil, tomato sauce, red pesto, nutritional yeast, black pepper and salt to taste - mix well. Once sauce is heated, add your Jumbo Lump crab meat, cherry tomatoes, and green onion.
*If you want to make it a spicy tomato sauce - add 1/2 teaspoon cayenne pepper or some red pepper flakes.
After the gnocchi floats to the top of your boiling water, drain and add to Crab Tomato sauce mixture. Once all ingredients are mixed in well, you are ready to serve. Add some Parmesan cheese and enjoy!
